Ingredients:- 4 slices bacon, smoked, if possible
- 1/2 cup onions, finely chopped
- 1/4 cup green pepper, chopped
- 1 egg
- 1 can (2 cups) cream style corn
- 1 teaspoon salt
- 1/8 teaspoon pepper
Cooking Instructions:- Cut bacon into 1-inch pieces.
- Slowly fry in a frying pan until crisp. Do not drain.
- Add onion and green pepper.
- Cook until onion is transparent, stirring occasionally.
- Drain off excess fat.
- Add corn, whole unbeaten egg, salt and pepper, mixing thoroughly.
- Cook over low heat for 10 minutes.
- Serve hot.
Serves 4.
